Here in the test kitchen, we’re always looking for new challenges: recipes and techniques that will test our skills and make us better, more knowledgeable cooks. And although we don’t usually concern ourselves with diets in the traditional sense of the word, there was something about the paleo diet that intrigued us—the focus on whole foods, the emphasis on cutting out processed junk foods, and the importance of cooking at home. The widespread popularity of paleo made us think that this was more than just a trend—there seemed to be room for the test kitchen to contribute and add value. Our online guide to paleo distills more than a year of research and will function as your guide to successful paleo cooking in the home kitchen. Plus, we show you exactly how to spiralize like a pro!
America’s Test Kitchen is a real 2,500 square foot test kitchen located just outside of Boston that is home to more than three dozen full-time cooks and product testers. Our mission is simple: to develop the absolute best recipes for all of your favorite foods. To do this, we test each recipe 30, 40, sometimes as many as 70 times, until we arrive at the combination of ingredients, technique, temperature, cooking time, and equipment that yields the best, most-foolproof recipe.

When I'm in a rush, I just shred zucchini right into my meat sauce, and simmer for 5-10 minutes while the zucchini cooks. The sauce thickens up again after the water from zucchini is released, then I serve with Parm, and eat like it's a stew. So Good!!! I don't have a fancy veggie noodle maker, so if I want Italian food, I'm shredding something, and it's usually zucchini. (I eat primal rather than paleo. Gotta have my cheese.)

Better understand what is healthy and what is not, not what is paleo. Nothing unhealthy about potatos. On the other hand, coconut sugar is not truly healthy. Nothing unhealthy about a grain bread when it is just a small part as with any other food (without added chemicals and grain oil and preservatives) and the persondoes not have celiac. Paleo is a marketing word, don't focus on marketing, focus on what is truly healthy and eat in variety. In short: fresh meat/fish/eggs/dairy, fruits, veggies, root veggies, legumes, greens, nuts, seeds.

I am carb sensitive. I easily pack on pounds if I eat carbs. Most restaurants gear their food to be mostly carbs because theyre less expensive. I would appreciate low carb and minimally processed recipes. Thank you!
