Whether you’ve been a practicing vegan diet for a while now or have recently decided to follow a plant based or vegetarian diet, know that just like any diet, there are healthy as well as unhealthy ways to go about nourishing yourself.
So here we have for you 5 healthy vegetarian recipes for weight loss, full of protein.
These are completely loaded with fresh veggies and flavors they are low in fat and calories and perfect for lunch, snack or starter!

1 Chili recipe 200 calories (1 serving)

Ingredients

1 garlic
1 tsp olive oil
1/4 medium yellow onion
1 medium carrot
1/4 medium red bell pepper
1/4 tsp ground cumin
1/4 tsp smoked paprika
1/8 tsp chili powder
salt and black pepper
1/4 tsp dried oregano
5 oz diced tomatoes
1/2 cup vegetable broth
1/2 cup water
1 bay leaf
2 oz red beans, cooked
1 tbsp parsley, chopped

Preparation

In a large pot over medium heat, warm the olive oil. Add garlic, the chopped onion, bell pepper, carrot, bell pepper and cook, stir occasionally, until the vegetables are tender, about 7 to 10 minutes.
Add chili powder, cumin, smoked paprika and oregano. Cook until fragrant about 1 minute.
Add the diced tomatoes, vegetable broth, water and bay leaf. Stir to combine and let the mixture come to a simmer. Continue cooking, stirring occasionally and reducing heat as necessary to maintain a gentle simmer, for 20 minutes. Add red beans and parsley and cook for additional 5 minutes. Remove the chili from heat. Serve garnished with chopped parsley

2 Broccoli pesto penne recipe 310 calories (1 serving)

Ingredients

2 oz wholewheat penne
7 oz broccoli florets
5 basil leaves
a small handful of parsley
1 tbsp vegan parmesan cheese
2 tsp olive oil
salt and black pepper
1 red chilli

Preparation

In a pan of boiling water, cook wholewheat penne according to package directions.
Steam broccoli in a steamer basket over boiling water for just 4 to 5 minutes.
In a food processor, whizz the broccoli with the basil, parsley, and 2 tsp oil, until finely chopped. Add the cheese and 3 tbsp of the pasta water to loosen the pesto, then pulse. Season to taste.
Add the broccoli pesto and mix through the pasta to coat.
Add chilli and stir-fry for 1 min over a high heat, until softened and browning slightly and serve.

3 Veggie wrap 260 calories (1 serving)

Ingredients

1 medium carrot
1/4 medium red bell pepper
1/4 medium red onion
1 tbsp cottage cheese
1 tbsp greek yogurt
1 tbsp dijon mustard
1 whole wheat tortilla wrap
1 oz spinach
1 tbsp pumkin seeds
salt and black pepper

Preparation

Peel and grate the carrot and cut the the bell pepper into strips
Peel the onion and cut in thin rings.
In a small bowl dd the cottage cheese, Greek yogurt , and dijon mustard and mix it well.
Spread the dressing mixture onto the wraps. Lay out the spinach leaves on top.
Put the carrots, bell pepper, onions and sprinkle the pumkin seeds on top.
Season with a dash of salt and pepper and fold the wraps a little on both sides.
Cut the wraps into halves and serve. Enjoy!

4 Chickpeas salad 300 calories (1 serving)

Ingredients

2 oz spinach
3 basil leaves
1 garlic
1 tbsp parmesan cheese
1 tsp olive oil
2 tbsp water
2 tbsp lemon juice
5 grape tomatoes
3/4 cup chickpease, canned or cooked
1/4 medium red onion
5 kalamata olives
salt and blacl pepper

Preparation

In a food processor add spinach, basil, lemon juice, olive oil, parmesan cheese, garlic and 2 tablespoon of water. Process for 1 minute until pesto is smooth, add another tablespoon of water if necessary. Season with salt and pepper to taste.
Next make the salad by adding chickpeas, tomatoes, diced onion, and olives to a large bowl. Fold in pesto to evenly coat and serve.

5 Strawberry spinach and quinoa salad 290 calories (1 serving)

Ingredients

1/4 cup quinoa
2 oz spinach
3 strawberries
1 tbsp chopped walnuts
1 tsp lemon juice

Preparation

In a small saucepan, cook quinoa according to package. Remove from heat fluff and let cool in a bowl.
In a large bowl, combine all the ingredients and serve.

Ratatouille Pasta

2 cups dried short pasta (cooked and drained)
½ an eggplant, cubed
1 zucchini, cut into 1 inch chunks
1 red bell pepper, cut into 1 inch chunks
½ red onion, sliced
3 garlic cloves, minced
1 tsp italian seasoning
1 cup marinara
½ cup pasta water
Olive oil
Salt pepper to taste
Parsley

Cook preferred pasta according to the package’s direction, drain and save some of the pasta water. Set aside.
In a large pan, add olive oil and let it get hot. Add the eggplant and season with salt and half of the italian seasoning. Cook it until it’s soft and golden brown, about 5 minutes. Remove and set aside.
Add more olive oil and add the bell peppers. Cook for a couple minutes until it’s slightly charred, then add the garlic, zucchini, red onion, salt, and italian seasoning. Continue to cook for another 3-5 minutes until veggies start to soften and smell amazing. Add the pasta along with the marinara and a little bit of pasta water. Mix well and finish it off with a drizzle of olive oil, parmesan cheese, and parsley. Enjoy!

Creamy Garlic & Mushroom Pasta
2 cups dried tube pasta (cooked and drained)
2 cups baby bella mushrooms, sliced
3 garlic cloves, minced
2 oz cream cheese
1 cup milk of choice
¼ cup pasta water
¼ cup grated parmesan cheese
Large handful of spinach
1 tsp italian seasoning
Olive oil
Salt and pepper to taste
Basil
Parsley

Cook preferred pasta according to the package’s direction, drain and save some of the pasta water. Set aside.
In a large pan on medium heat, drizzle olive oil and add garlic. Saute until fragrant and add mushroom. Season with salt and half of the italian seasoning. Cook for 3-5 minutes until soft.
Add cream cheese and pasta water in and let it melt. Pour in the milk, salt, and italian seasoning. Let it come to a simmer and thicken. Once it starts to get a bit thicker, add the pasta and parmesan cheese. Mix well and add the spinach, basil, and parsley right before it’s done. Mix and serve. Enjoy!

Lemony Cauliflower Pasta
1 small head of cauliflower, cut into 1 inch pieces
2 cups dried pasta, cooked and drained
½ cup panko breadcrumbs
4 cloves garlic, minced
¼ cup grated parmesan cheese
2 oz cream cheese
½ cup pasta water
1 tablespoon butter
Zest from whole lemon
Juice from whole lemon

Cook preferred pasta according to the package’s direction, drain and save some of the pasta water. Set aside.
In a large pan, add olive oil and let it get hot. Add 1 clove garlic garlic and panko bread crumb. Toast it all until lightly browned. Remove and set aside.
In the same pan, drizzle more olive oil and add the cauliflower with a bit of salt. Pan roast it for about 8 minutes until it’s softened slightly and golden brown. Next, add the rest of the garlic, butter, and saute until fragrant. Add cream cheese, pasta water, lemon zest, lemon juice to create the sauce. Stir in the cooked pasta and coat it in the sauce.
To serve, add the pasta and cauliflower, top with the garlic bread crumbs, parsley, and a hint of chili flakes. Enjoy!

These are the anti-inflammatory foods I eat every week to reduce inflammation in my body. An anti-inflammatory diet can help with reducing joint pain and arthritis, healing the gut (key if you have celiac, ulcerative colitis, Crohn’s or IBS), getting rid of eczema and psoriasis, and keeping other autoimmune conditions such as diabetes, rheumatoid arthritis and multiple sclerosis in check. It’s also beneficial if you suffer from anxiety or depression.

I became well versed in wholesome, anti-inflammatory foods several years ago when I embraced a whole foods diet. After being diagnosed with four autoimmune diseases in two years I realized my body was fighting massive immune system inflammation and I needed to provide reinforcements. Those reinforcements came in the form of groceries.

Ingredients:
1/2 cup (45g) Rolled oats
1 tablespoon Chia seeds
1/2 cup (45g) blueberries
Pinch salt
1/4 cup (70g) Greek yogurt
1-2 teaspoons Maple syrup
1/2 cup (120ml) Almond milk or any milk of your choice
slivered almonds and blueberries for topping

Chocolate & banana overnight oats:
Ingredients:
1/2 cup (45g) Rolled oats
1 tablespoon Chia seeds
1 tablespoon Cocoa powder
Pinch salt
1/4 cup (70g) Greek yogurt
1-2 teaspoons Maple syrup, optional
1/2 cup (120ml) Almond milk or any milk of your choice
1/2 Banana
Chocolate shavings and banana slices for topping

Apple pie overnight oats:
Ingredients:
1/2 cup (45g) Rolled oats
1 tablespoon Chia seeds
Pinch salt
1/4 cup (70g) Greek yogurt
1/2 cup (120ml) Almond milk or any milk of your choice
1/2 Apple, grated
1/2 teaspoon Cinnamon
1-2 teaspoons Honey/maple syrup, optional
Walnuts

Pina colada overnight oats
1/2 cup (45g) Rolled oats
1 tablespoon Chia seeds
2oz (60g) Pineapple
Pinch salt
1/4 cup (70g) Greek yogurt
1-2 teaspoons Honey/Maple syrup *optional
1/2 cup (120ml) Coconut milk or any milk of your choice
1 tablespoon Desiccated coconut
1/2 teaspoon Vanilla extract
Pineapple chunks and desiccated coconut for topping

Peanut butter & jelly overnight oats:
Ingredients:
1/2 cup (45g) Rolled oats
1 tablespoon Chia seeds
Pinch salt
1/4 cup (70g) Greek yogurt
1/2 cup (120ml) Almond milk or any milk of your choice
2 tablespoons Natural peanut butter
2 tablespoons Fruit jam of your choice
Crushed peanuts and natural peanut butter for topping

Directions:
1. Place all ingredients into a large glass container/bowl and mix until combined.
2. Transfer to a jar or a glass. Place in the fridge for at least 4 hours or overnight.

What I mean by realistic is that I do go a little extra and put in more effort for my other meals videos because I try to make them more presentable, but today’s video is a more relaxed version as this is literally what I would make on a daily basis.
