Ingredients:
For Dressing:
2 tbsp extra virgin olive oil
fresh coriander leaves – roughly chopped
3 cloves of garlic – finely minced
2 tsp dried oregano
3 tbsp lemon juice
3/4th tsp cumin powder
1/4 tsp chilli flakes
For Salad:
200 gms lettuce
tomatoes – chopped
corn
1/2 cup kidney beans – boiled
1 avocado
spring onion
Method:
To make the dressing:
– In a small glass, add the extra virgin olive oil, fresh coriander leaves, minced garlic, dried oregano, lemon juice, cumin powder and chilli flakes and whisk all the ingredients well.
To make the salad:
– Roughly chop the lettuce into bite-sized pieces.
– In a bowl, add the lettuce, chopped tomatoes, corn, boiled kidney beans, avocado, spring onion and little dressing and toss the ingredients.
– Keep adding the dressing as you toss the salad through.
– The delicious Mexican Salad is ready to be served.

✅Ingredients
Salad:
• 30 ounces canned chickpeas, drained and rinsed
• 1 pint red grape or cherry tomatoes, halved or quartered
• 1 English cucumber, diced
• 1 green bell pepper, diced
• 1 small red onion, thinly sliced
• ½ cup sliced kalamata olives
• ½ cup crumbled feta cheese
• 2 tablespoons freshly chopped basil
• 2 tablespoons freshly chopped mint
Dressing:
• 2 tablespoons honey
• 3 tablespoons extra virgin olive oil
• 2 tablespoons lemon juice
• 2 tablespoons white wine vinegar
• ¼ teaspoon salt
• ¼ teaspoon black pepper
✅Instructions
1️⃣ In a large mixing bowl, toss together chickpeas, tomato, cucumber, bell pepper, red onion, olives, feta, basil, and mint.
2️⃣ For the dressing, pour honey into a microwave-safe mixing bowl. Microwave 10-15 seconds to liquify honey. Whisk in olive oil, lemon juice, vinegar, salt, and pepper.
3️⃣ Pour dressing over chickpea salad. Toss to combine. Refrigerate until ready to serve.

I personally would add the tomatoes last as the moisture in them could make the salad limp or add cherry tomatoes.

I made this yesterday for 1st night of Pesach (Passover), omitting the feta cheese as that would be mixing a milk product with a meat product at the same meal. It went very well with the grilled lamb and matzo. (Many northern European Jews do not eat lamb and will not eat chickpeas during the 8 days of Pesach. Mediterranean Jews eat lamb and have no problem eating chickpeas or rice during Pesach.)

If you are gonna add pre-cooked chickpeas, then ild recommended that you put them in boiling water for 2-4 min, just to get rid of the taste of the brine. Though if you have some time and patience ild really recommend that you cook your own chickpeas as it is much more rewarding and it is slightly tasteir imo.

This looks delicious and easy to make. I will try it the next time my friend comes for dinner. I don't like honey, so I will add some fruit. When my daughter comes to dinner I can easily make it vegan, just leave out the feta, and maybe add cashews and avocado. Thanks so much!
